You're comparing a high-res crop sensor camera to a low-res full frame camera! That said, in dpreview's studio comparison, the noise levels look quite comparable at similar ISOs (especially if you put it in COMP or PRINT view). I think the 7500 probably shows more sharpness but it is a small difference.
Focal Lengths go further – The same focal length on an APS-C camera will zoom in further than on a full frame camera. I.e. 600m on a full frame camera will be 400mm on a crop sensor. In short, a lighter and smaller lens can zoom in further. Cheaper – in general smaller sensor cameras are cheaper, particularly the APS-C system.
If you like shooting starscapes or in low-light, full-frame is worth it. If you like shooting with big aperture wide-angle lenses, full-frame is worth it. If most of what you shoot is at f/8, at non-wide-angle focal lengths, at low ISO's, it's probably not worth it. If you value size/weight and cost, full-frame probably isn't worth it.
It is worth noting that medium format sensors come in two main sizes: The 'full frame' medium format size is used by Phase One, and in Hasselblad's H-series cameras, and it corresponds closely with the old 645 film format.
The GFX 100S' Raw video output is reduced down to 3840 x 2160 pixels and is taken from the full width of the sensor. The camera is limited to a minimum of ISO 1250 and, as usual for Raw video, produces a noisier, softer result than the camera's more processed output. Rolling shutter is comparable to the in-camera footage.
